London, ON –Back from a 20-day international journey, Chair of Foods and Nutritional Sciences, Dr. Alicia Garcia, along with students Andrea and Gretchen Lee, look back at their unique three-week international exchange program with Wayo Women’s University in Chiba, Japan. Garcia says that it was “a true cultural immersion.”
All three women experienced the Japanese culture, through shadowing dietitians, attending various classes at Wayo, and gaining first-hand knowledge about Japanese food service systems and patient consulting. A unique component of the trip for Garcia was participating in a longitudinal study that examined the effects of nutrition education in elementary schools.
Both Green and Lee were hosted by Japanese families to further enrich their stay. “The families were exceptionally kind and generous,” explains Green. Lee says, “We have learned how to think outside the box, we’ve gained self-confidence, and most importantly we have greater cultural awareness.”
The international exchange initiative was part of Brescia’s mandate to encourage upper-year undergraduate students to explore international exchange opportunities available. Brescia also has exchange agreements with schools in Barbados, England, France, and the Netherlands.
