New Foods Services Manager to add flavor to Brescia

London, ON London, ON –Brescia’s new residence complex and dining pavilion, opening in September 2013, will be accompanied by a new Foods Services Manager and master chef Tim D’Souza who has already made a name for himself in the industry and on campus. He is currently delighting students, staff, and the general public with his culinary creations and is looking forward to serving even more clients when Brescia’s facility opens.

With over 20 years of experience, D’Souza brings with him the passion and knowledge that is necessary when developing a new food complex. Brescia’s Director of Ancillary Services, Michelle Griffore-Kemp says, “In only a few short months Tim has revolutionized the menu at Brescia with his focus on fresh, local, and seasonal ingredients. When you couple his experience and excitement for food with our new state-of-the-art marché, the possibilities are endless.”

D’Souza completed his culinary studies at George Brown College, where he was accepted into the College’s post-graduate Italian Culinary Arts program. He soon gained international experience when he went on to work at Michelin-starred restaurants and hotels in Italy and England before returning to Toronto. He soon became well known in restaurants including Accents Restaurant in the Sutton Place Hotel, Oro, and the Granite Club. D’Souza eventually became Executive Chef at Thornbury, Ontario’s Mill Cafe, where he served locally-sourced ingredients and received a rave review from Toronto Life Magazine who said that, “stellar meals had become the norm at the Mill Café with D’Souza at the helm”. Prior to arriving at Brescia, D’Souza was the Executive Chef at the Idlewyld Inn in London.

“My experience so far has been one of excitement – excited to be in such a dynamic environment; about our new dining pavilion; and about the future of Food Services at Brescia,” says D’Souza.

The doors to the Brescia residence and dining pavilion will be open for the start of the school year in September 2013.
